Hello does anyone have any instructions. Simple ones preferably on how to set up the collabora add on for document editing available? Maybe also if there is a better addon which allows users to edit documents with out having to download them?

putting the search term "collabora" in the search on the top right corner gives you a few hits with some resources. Especially [1] is something you should have a look at.
Neither Collabora Online nor the Documents App requires the user to download files before they can edit them.
