about Owncloud X, i need to get a report from all sharing from al user for a period of years how get this please ?

maybe this could help

specifically to your question - for our enterprise customers we have the admin audit app.

This GDPR is actually more for companies.
You would have to log everything with log level debug, which would cause huge amount of data, and then you would have to search those logs with grep for example for that username after a year.
