is it possible to get only a list of the files which are in the cloud in the desktop client (as example for mac)?
So that when I move the files out of the ownCloud directory that the files will be downloaded?
No not with the owncloud client. But you can connect directly via webdav and then copy the files from this network resource. With apple+k you can connect to webdav resources in the finder (the link can be found on the lower-left when you click on the rack-wheel). In case it doesn't work (there have been some errors reported), please try cyberduck or other webdav clients.
