I want to send all my logs directly from owncloud to a centralized log collector inside my organization, there are any application or configuration to apply to do this?

That depends on your setup and your existing central log mgmt. We use Graylog + Filebeat/Journalbeat to collect all container logs as well as the ownCloud Core and Audit log file. But again, that highly depends on your setup, and you should stick to whatever you use already to collect and forward logs of your applications. There is nothing special to ownCloud related to log mgmt.
